Fruit Pizza | On The Menu

Summertime. Endless piles of fresh fruit at the grocery store. That actually tastes good. And endless invites to backyard cookouts. It’s fabulous, no?

I had almost forgotten about fruit pizza. Almost. But thanks to an impromptu Memorial Day cookout with friends, and most likely thanks to Emily who first introduced me to the stuff, I was reminded. Brightly colored fresh fruit laid out on a bed of cream cheese spread atop a sugar cookie.  Lemme tell ya – it’s really hard to stop at one piece. So I usually don’t. (I know, I’m a bad girl.)

This is nonsense – I NEED YOU IN MY LIFE!

It’s so easy to make – you bake a cookie, you mix some cream cheese, you cut fruit and lay it out on top so it looks like you slaved over it and then slop on some preserves. I’m drooling just thinking about it. No, really, I’m salivating… I may need to make a fruit pizza for one this weekend. If Mike’s really nice I might share. Maybe.
